We are commonly asked, "Why do your live lobsters taste so good?" and "What makes your lobsters so sweet?"
Well, the simple answer is the locations in Maine where we source our lobsters.
Another important fact is that our lobsters are never stored in a chemical tank. Tony's lobsters live in the Atlantic Ocean. After they are caught, they are picked up by us or directly shipped to us and hand-placed in our 2,000-gallon ocean water lobster pond. TASTE THE DIFFERENCE!!
When purchasing lobsters from another location, ask if the water in the lobster tank is ocean water, or aquarium water. If they don't know the answer to this...I would think twice about eating them.
When you see a lobster sale at a store that doesn't have a tank and the lobsters are in bags, or sitting in a cooler with other raw food products (chicken, beef, pork), stressed and dying from the lack of water, the taste and tenderness are compromised.
You do get what you pay for...think about what you are eating!
Another common question is, "What is dry weight vs. wet weight?"
Wet weight is the weight of a live lobster freshly removed from a lobster pond or tank.
Dry weight is the weight of a lobster that has been kept out of its natural environment, allowing most of the body to drain away, taking the flavor with it and reducing its life.

What is the difference between Maine and Connecticut lobster roll?
The few hours' drive between the two states separates their lobster roll styles by a world. “People have deep allegiances,” to their favorite places and preferred style.
In Maine, that's traditionally cold lobster meat, while in Connecticut, it's warm.
While the origin of Maine lobster sandwiches is murkier than the Atlantic, the original, warm lobster roll came from the now shuttered Perry’s in Milford, Connecticut—though it was prepared differently than the lobster rolls of today—which started serving them in 1926, according to Sally Lerman, the author of Lobster Rolls of New England and self-proclaimed “lobster gal.”

STORING YOUR LOBSTERS AT HOME
In a fridge, keep lobsters as cold as possible in an open container such as a cardboard box. Pack them with seaweed or damp newspaper to keep them moist but not wet. Never store them on ice or in tap water, as the fresh water will kill them.
