What is the difference between Maine and Connecticut lobster roll?


The few hours' drive between the two states separates their lobster roll styles by a world. “People have deep allegiances,” to their favorite places and preferred style. 

In Maine, that's traditionally cold lobster meat, while in Connecticut, it's warm.


While the origin of Maine lobster sandwiches is murkier than the Atlantic, the original, warm lobster roll came from the now shuttered Perry’s in Milford, Connecticut—though it was prepared differently than the lobster rolls of today—which started serving them in 1926, according to Sally Lerman, the author of Lobster Rolls of New England and self-proclaimed “lobster gal.”

Lobster Halves are the most popular lobsters in our area. They weigh between 1.5 to 1.65 pounds. The Halves are perfect as a main course, steamed, boiled, bake stuffed or grilled.


Lobster Chix are the smallest lobsters available for sale in Connecticut weighing 1 to 1.20 pounds. The perfect lobster for surf & turf or the family lobster bake.

Lobster Quarters are just a bit larger then the chic, weighing between 1.25 and 1.35 pounds. This size is one of the most popular in our area. Perfect for steaming, stuffing or grilling.

STORING YOUR LOBSTERS AT HOME


In a fridge, keep lobsters as cold as possible in an open container such as a cardboard box. Pack them with seaweed or damp newspaper to keep them moist but not wet. Never store them on ice or in tap water, as the fresh water will kill them.

At Tony’s, our lobsters are never stored in chemical or artificial tanks.
Our lobsters live in the Atlantic Ocean until they’re caught, then picked up by us and shipped directly to our store.

Once they arrive, we hand-place each one into our 2,000-gallon ocean water lobster pond — the next best thing to the open sea.

WHAT TO LOOK FOR WHEN BUYING LOBSTERS

When purchasing lobsters elsewhere, ask if the tank water is ocean water or aquarium water.
If they can’t answer that question — think twice before eating them.

or pork, those lobsters are stressed and dying from lack of water and air.
